This temperature is maintained during separation, transportation, and storage to preserve freshness, moisture, and maximum nutritional value.
Throughout this “chilling” process, the temperature is maintained at 0-4 degrees Celsius to ensure each piece of meat meets the standard for freshness and tenderness.
Only meat that has undergone these three steps of rapid chilling, temperature balancing, and sustained chilling can be labeled as European-standard chilled meat.
