Hung Kaka, a Vietnamese YouTuber based in Africa, runs a farm with a group of Vietnamese and African individuals. He teaches locals how to grow rice and various crops and provides medical support. His daily life and experiences on the farm are shared on his popular YouTube channel, which has gained a dedicated following.
Every weekend, Hung cooks delicious Vietnamese dishes to treat the farm’s team leaders and deputies. He aims to boost their energy and morale after a long week of hard work and prepare them for an even more productive week ahead.
One of the signature dishes he introduced to his colleagues was bun rieu, a popular Vietnamese noodle soup.
Hung and his team caught a 5kg male duck from the farm. After plucking and preparing the duck, they roasted it over a fire to enhance its flavor.
An essential ingredient in this dish is shrimp paste, which Hung’s group brought with them to Africa. The farm also had a ready supply of ginger and lemongrass.
The roasted duck was then cut into bite-sized pieces and marinated with a blend of spices, including ginger, lemongrass, shrimp paste, fish sauce, MSG, and molasses, for about 15-20 minutes. The duck was then cooked until the meat was tender and the flavors melded beautifully.
While the duck was cooking, Hung’s group prepared the noodles by boiling the dried vermicelli and then rinsing it with clean water.
A Delicious Cultural Experience
Hung served the bun rieu, placing the noodles in bowls and topping them with the savory duck broth. The distinct aroma of the dish captivated everyone. Hung explained that it was a beloved dish in Vietnam, and his colleagues were excited to try it.
As they savored the bun rieu, the group couldn’t stop expressing their delight. For some, it was a culinary experience unlike any other:
