Hung and his team caught a 5kg male duck from the farm. After plucking and preparing the duck, they roasted it over a fire to enhance its flavor.

As fresh rice vermicelli was unavailable, the group used dried vermicelli, ensuring to rinse it after cooking.

The mouthwatering bun rieu, filled with aromatic flavors, is served hot to the eager group.

An essential ingredient in this dish is shrimp paste, which Hung’s group brought with them to Africa. The farm also had a ready supply of ginger and lemongrass.

The roasted duck was then cut into bite-sized pieces and marinated with a blend of spices, including ginger, lemongrass, shrimp paste, fish sauce, MSG, and molasses, for about 15-20 minutes. The duck was then cooked until the meat was tender and the flavors melded beautifully.

While the duck was cooking, Hung’s group prepared the noodles by boiling the dried vermicelli and then rinsing it with clean water.

Hung’s African colleagues were excited to try this unique Vietnamese specialty for the first time.

Everyone eagerly devoured the dish, with each person enjoying three bowls and still wanting more.
