On December 21st, Mr. Nguyen Van Mien (residing in Quach Pham commune, Ca Mau province) revealed that his specialty, crab paste soaked in salted fish sauce, is sold on the market for nearly 1 million VND per kilogram (depending on the time).

The selected crabs weigh approximately 300 grams each. After cleaning, they are soaked in high-protein salted fish sauce, prepared according to a unique recipe.

“During the first 30 days, the natural saltiness helps the crabs reach a preliminary stage of maturity. At this point, I drain the fish sauce, reheat it with additional seasoning, let it cool, and then soak the crabs for another 60 days,” shared Mr. Mien.
The final product features a red, tender crab paste with a rich aroma, free from any fishy taste. This delicacy is considered one of Ca Mau province’s premium specialties. Consumers can enjoy it directly with rice or mix it with chili, garlic, and lime juice. The combination of the crab’s richness, the lime’s sourness, and the chili’s heat creates a delicious and rice-friendly dish.
Ca Mau boasts approximately 365,000 hectares dedicated to crab farming alongside shrimp, with an annual production exceeding 31,000 tons. The province aims to increase total crab production to 36,500 tons by 2030, striving for exports and developing a supply chain to reach 30% of the total production. Ca Mau crabs are renowned for their exceptional taste and quality, contributing significantly to the province’s economy, generating thousands of billions of VND annually.
